Hey, I looked on the forum but can’t find anything definitive.
Is there a set weight of canvas that is required to count as armor? Would standard duck canvas (12 oz.) work?

Without actually seeing the material in question, it's hard to say definitively, and the final call will always reside with your local Marshal who evaluates armor, so take this as advise only and not a final call.

Best guess, based on your description and this passage from the Armor Materials section on page 79 of the PDF ARB, I would aware 1-point of armor per location assuming all other requirements are met.

1 point: Light Non Metallic Armor. This
level is awarded for the following types of materials:
leather, leather scale, padded cloth,
naugahide, suede, doeskin, vinyl, heavy canvas,
bone, rope and wood. Failure to cover at
least half of the armor location results in no
points being rewarded for that area. This level
of armor on the head provides protection from
Waylay 1.

I would say that the material you described would fall under the Heavy Canvas designation and would be worth 1 point of armor.

I would NOT award 2-points because it does not have metal studs, nor does it have 14 gauge metal rings (based on your description), nor is it made of metal. I would also not award 2-points because the description specifically lists 10-oz Leather or heavier; yes it is 12-oz canvas, but it isn't Leather so wouldn't count.
