Do they have to be one handed weapons or can they be two handed?

They can be two handed, following the guidelines in the rulebook for 2 handed blunt weapons. As with all two handed weapons though, you must wield the weapon with both hands at all times.

Further, even if it is one handed length, you can still wield it with two hands if you want to. You would not receive the two-handed weapon bonus since it's still a one handed weapon, but if that makes it easier for you fight safely, you should feel free to go for it.

You can also wield a one handed weapon with two hands even if your race does not allow it (Ex. A dwarf using a one handed sword with two hands) still keeping in mind what Inaryn posted.

Ok my next question is this is there a size limit to the head of the warhammer or handle length?

Yes, as per pg 80 of your rulebook, they count as blunt weapons.
