Monster Strength

Quick question about Monster Strength. I know it makes no sense, but does Monster Strength apply to a bow?

Yes. You only add it once (rather then 1.5 like a prof or x2 like it used to be years ago).
Rulebook, P.71, under Superhuman Strength.

That's what I figured, I just find it odd that it would work with a bow, especially crossbow.

To make some IG sense, I would go with the monster having a specially made bow that has a much, much higher draw weight.
