Still pops your Weapon Shield. That's no different than any other situation - if I throw a Ward at my buddy, it still pops his Spell Shield even though he's not a valid target, and a Shatter spell targeting an Indestructible shield still pops a Spell Shield.

To be clear, you need 4 Weapon Proficiencies for every Eviscerate you buy. You can only buy 1 Eviscerate if you have 4 profs, 2 Eviscerates if you have 8, etc. It's similar to Slay in that respect, though Slay is every 2. Page 50 of the 1.3 rulebook spells out how these purchases work.
